<span style="font-size:16px;font-family:宋體;"><span style="font-size:16px;">準(zhǔn)廚師考核三道指定菜,即酸辣土豆絲、燒茄子、木須肉。準(zhǔn)配菜工主要考核刀工和配菜速度,考核刀工指定菜為:切土豆絲、切茄子塊;配菜速度綜合考評(píng)菜為木須肉,自己切、自己配,最終將考核時(shí)間和配菜質(zhì)量納為考核成績(jī)。</span></span><span style="font-size:14pt;font-family:宋體;"></span>
